We grow our vines in a natural way with lots of care to get the best fruit : Very short prunning, gobelet prunning for Grenache, Cinsault and cordon de Royat for Syrah; Regular ploughing to get the roots very deep ; De-budding in the heart of the vines during spring time ; Only organic treatments ; Organic amendments only to rebuild the nature of the soils. We have started an organic certification since 2008 (ECOCERT) which guarantee our grapes are grown organically ! Vinification : We vinify our wines traditionnally and we think great grapes make good wines ... The grapes are handpicked early in the morning in small cases to keep the berries intact and give our wine the maximum aromas. The harvest is destemmed; each vine parcel is vinified separetely. The vinification is very traditionnal: long maceration of 3 weeks with regular pumping-over as well as punching of the cap. Ageing in tanks or barrels from 6 to 24 months depending on the wines.
